Ingredients

  • 1 cup egg whites
  • 1/2 teaspoon salt
  • 1 teaspoon cream of tartar
  • 1 cup plus 2 tablespoons sugar
  • 1/2 cup flour
  • 1/2 teaspoon vanilla
  • 6 egg yolks
  • 2/3 cup flour

Instructions

  1. Beat the egg whites until foamy.
  2. Add salt and cream of tartar; beat until stiff but not dry.
  3. Carefully fold in 1 cup plus 2 tablespoons sugar.
  4. Divide the mixture into two equal parts.
  5. Fold into one part the 1/2 cup sifted flour and vanilla.
  6. Fold into the other part the beaten egg yolks, 2/3 cup sifted flour, and orange extract.
  7. Place spoonfuls of each batter into an ungreased 9-inch tube cake pan, alternating yellow and white to create a marble effect.
  8. Bake in a 325°F oven for 60 minutes.
