Ingredients

  • 2 lb. dandelions
  • 1/4 c. green onions, minced
  • 4 slices bacon
  • 2 Tbsp. vinegar
  • 1/2 tsp. dry mustard
  • 1 1/2 tsp. sugar
  • salt and pepper
  • 2 hard-cooked eggs, sliced

Instructions

  1. Wash the dandelion greens thoroughly.
  2. Cook the greens in a small amount of salted water until tender, then drain well.
  3. Chop the greens if the leaves are large.
  4. Add minced green onions to the greens.
  5. Cook bacon slices until crisp, then remove and set aside.
  6. To the bacon drippings, add vinegar, dry mustard, sugar, salt, and pepper to taste, then heat.
  7. Pour the hot vinaigrette over the cooked greens and onions.
  8. Garnish with sliced hard-cooked eggs and crumbled bacon.
