Ingredients

  • 2 c. lukewarm water
  • 1 Tbsp. yeast
  • 2 Tbsp. honey
  • 1/3 c. gluten flour
  • 1 Tbsp. salt
  • 1 Tbsp. caraway seed
  • 1/4 c. carob powder
  • 1/2 c. rolled oats
  • 3 c. rye flour
  • 1/3 c. molasses
  • 2 c. whole wheat flour
  • unbleached white flour as needed

Instructions

  1. Stir honey into water until dissolved.
  2. Sprinkle yeast over water to soften.
  3. Stir together in large bowl next 6 ingredients. Beat in molasses.
  4. Allow to stand 10 minutes.
  5. Add whole wheat flour and beat.
  6. Add enough white flour to make a stiff dough.
