Ingredients

  • 8 oz. pitted dates, coarsely chopped
  • 1/4 cup corn oil
  • 3/4 cup boiling water
  • 1/2 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup sugar
  • 1/3 cup chopped nuts
  • 1/2 teaspoon baking soda

Instructions

  1. Stir together boiling water, corn oil, chopped dates and vanilla in a bowl.
  2. In a mixing bowl, combine flours, sugar, chopped nuts, and baking soda.
  3. Add the flour mixture to the date mixture and stir until the flour is moistened.
  4. Grease 12 muffin cups.
  5. Bake at 375°F (190°C) for 25 minutes.
