Ingredients

  • 2 cups plain flour
  • 2 cups quick cooking oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup firmly packed brown sugar
  • 3/4 cup butter or margarine
  • 1 (8 oz) package chopped dates
  • 1 cup sugar
  • 1 cup water

Instructions

  1. Combine flour, oats, baking soda, salt, and brown sugar in a mixing bowl.
  2. Cut in butter with a pastry blender until mixture resembles coarse meal.
  3. Press half of the oat mixture into a greased 12 x 8 x 2-inch baking pan.
  4. In a saucepan, combine chopped dates, sugar, and water.
  5. Cook over medium heat until mixture thickens and dates are soft, about 10 minutes.
  6. Spread the date filling evenly over the pressed oat mixture in the baking pan.
  7. Sprinkle the remaining oat mixture over the date filling.
  8. Bake in a preheated oven at 350°F (175°C) for 25 minutes or until golden brown.
  9. Allow to cool before cutting into bars.
