Ingredients

  • 1/2 c. butter
  • 1/2 c. brown sugar
  • 1/2 c. white sugar
  • 1 egg
  • 2 c. flour
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 1/2 lb. dates
  • 1 tsp. lemon juice
  • 1/3 c. water
  • 1/4 c. sugar
  • 1/2 c. nuts, chopped

Instructions

  1. Combine first 7 ingredients.
  2. Beat well.
  3. Roll dough about 1/4-inch thick.
  4. Mix dates, lemon juice, water and sugar.
  5. Cook together 5 minutes.
  6. Add the chopped nuts to date mixture.
  7. Spread over cookie dough.
  8. Roll up like a jelly roll.
  9. Wrap in wax paper. Leave in refrigerator overnight.
  10. Slice and bake in 350° oven until lightly browned.
