A cheesy, flavorful enchilada casserole layered with tortillas, cheese, onion, and enchilada sauce, baked to perfection—perfect for family dinners and casual gatherings.

Ingredients

  • 1 pkg. (24) corn tortillas
  • 1/2 cup chopped onion
  • 1 small can enchilada sauce
  • 1 pkg. Cheddar cheese
  • 1 small sour cream

Instructions

  1. Cut tortillas into 1-inch strips.
  2. Layer the bottom of an oblong casserole dish with some tortilla strips.
  3. Sprinkle cheese over the layer.
  4. Add chopped onion and a few tablespoons of sour cream on top.
  5. Repeat layers until all tortillas and onion are used.
  6. Add the remaining sour cream and cheese on top.
  7. Pour enchilada sauce over the top.
  8. Bake at 350°F for 45 minutes.
