Ingredients

  • 4-5 slices of flat bread or pita bread
  • 4-5 teaspoons pesto sauce
  • 4-5 tablespoons focaccia herb topping
  • 1 medium yellow onion, chopped fine
  • 1 green pepper, chopped fine
  • 4 teaspoons fresh minced garlic
  • 1 large tomato, chopped fine
  • 1 package grated cheddar cheese
  • 1/2 cup pimento cheese

Instructions

  1. Spread an even coat of olive oil on each piece of flatbread or pita bread.
  2. Preheat the oven to 400°F (200°C).
  3. Combine all ingredients—chopped onion, green pepper, minced garlic, chopped tomato, grated cheddar cheese, and pimento cheese—in a bowl and mix well.
  4. Spread a generous amount of the mixture on each piece of bread.
  5. Bake in the preheated oven for 15 to 20 minutes until the topping is bubbly and golden.
