Ingredients

  • 1/4 cup water
  • 2 green onions, sliced
  • 1 (9 oz.) package frozen artichoke hearts
  • 1 cup thinly sliced celery
  • 1/2 cup chopped baked ham
  • 1/4 cup pitted green olives
  • 1 cup low-fat cottage cheese
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 8 small (6-inch) pita bread
  • Grated Parmesan cheese (optional)

Instructions

  1. Combine water, artichoke hearts, and celery in a small saucepan. Simmer, covered, for 15 minutes.
  2. Drain the artichoke mixture well. Finely chop the ham, green onions, olives, and artichoke mixture in a food processor.
  3. Scrape the chopped mixture into a large bowl.
  4. Puree the cottage cheese in the food processor.
  5. Add the pureed cottage cheese, mayonnaise, and lemon juice to the bowl with the chopped mixture. Mix well.
  6. Spread the mixture evenly on the pita breads and cut into wedges.
  7. Optional: sprinkle with grated Parmesan cheese.
  8. Serve the pita crisps immediately or refrigerate until ready to serve.
