A tender, flavorful roast beef cooked with a creamy mushroom and onion soup mixture, ideal for make-ahead meals and perfect for family dinners or special occasions.

Ingredients

  • beef roast
  • 2 cans beefy cream of mushroom soup
  • 1 1/2 cans water
  • 1 pkg. dry onion soup mix

Instructions

  1. Mix the beefy cream of mushroom soup, water, and dry onion soup mix together in a bowl.
  2. Place the beef roast in a pan and pour the soup mixture over it.
  3. Seal the pan with foil and put a lid on top.
  4. Cook at 350°F (175°C) for 1 hour per pound of roast.
  5. Cool the roast and refrigerate overnight with the foil still sealed.
  6. The next day, do not open the foil.
  7. Skim the fat off the top of the juices.
  8. Slice the beef and heat at 300°F (150°C) for 1 hour before serving.
