Ingredients

  • 2 lb. boneless chicken breasts
  • 1/4 c. margarine
  • 1 medium onion, diced
  • 15 oz. can tomato sauce
  • 1 medium green pepper, diced
  • 1/4 c. chopped parsley
  • 1/2 tsp. oregano leaves
  • 1/2 tsp. chopped garlic
  • 1/2 c. dry red wine
  • salt and pepper to taste

Instructions

  1. Cube chicken; brown in margarine.
  2. Set aside.
  3. In same pan, cook onions and pepper.
  4. Add to chicken.
  5. Add tomato sauce and seasonings; heat.
  6. Add chicken and vegetables.
  7. Cover; simmer about 35 minutes, adding wine during simmering.
  8. Serve over angel hair pasta or linguine.
