Ingredients

  • 8 slices bacon
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 medium potatoes, peeled and diced
  • 1 cup chicken broth
  • 1/4 cup chopped parsley
  • 10 1/2 oz. can cream of mushroom soup
  • 1/2 cup sour cream
  • 1 1/2 cups milk
  • salt and pepper to taste

Instructions

  1. In a saucepan, cook bacon, chopped onion, and chopped celery until bacon is lightly browned and vegetables are tender.
  2. Pour off drippings. Dice potatoes and add with chicken broth, salt, and pepper.
  3. Cover and simmer for 12 to 15 minutes or until potatoes are done.
  4. Stir in cream of mushroom soup, sour cream, milk, and chopped parsley.
  5. Heat through and serve.
