Ingredients

  • 3 lb. lean hamburger
  • 3 large onions
  • 1/2 lb. bacon
  • 3 Tbsp. basil leaves
  • 3 Tbsp. oregano
  • 1/2 cup bacon grease
  • 2 to 3 Tbsp. chili powder
  • 1/4 cup jalapeno pepper
  • 1 (28 oz.) can tomatoes
  • 1 (6 oz.) can tomato paste
  • 2 beef bouillon cubes
  • 1 cup water

Instructions

  1. Cook the lean hamburger until browned, then drain well.
  2. Cook bacon until crispy and crumble into small pieces.
  3. Save the bacon grease and sauté the chopped large onions until lightly browned.
  4. Bring water to a boil and add the beef bouillon cubes, stirring until dissolved.
  5. Add all ingredients except beans into the slow cooker, including browned hamburger, crumbled bacon, sautéed onions, tomatoes, tomato paste, herbs, chili powder, jalapeno, bacon grease, and water.
  6. Heat the mixture to a boil, then reduce to a simmer and cook for 4 to 5 hours or longer.
  7. Add the beans halfway through the cooking time, allowing them to heat through and absorb flavors.
  8. Adjust chili powder or red pepper for desired heat level before serving.
