Ingredients

  • 1 1/2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 cup fat-free egg substitute
  • 1 (10 oz.) jar sugar-free raspberry, cherry, or apricot preserves
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon almond extract
  • 1 cup flour

Instructions

  1. Heat oven to 325°F (160°C).
  2. Thoroughly coat a 9 x 13-inch pan with nonstick spray.
  3. Combine sugar and cocoa powder with an electric mixer.
  4. Gradually pour in egg substitute and jam, beating on low speed until sugar is no longer grainy.
  5. Add vanilla extract, salt, and almond extract; beat briefly.
  6. In a separate bowl, stir together flour, baking soda, and salt with a rubber spatula.
  7. Fold the flour mixture into the wet ingredients until just combined.
  8. Pour the batter into the prepared pan.
  9. Bake for 30 to 35 minutes.
  10. Allow to cool, then cut into 2 x 2-inch bars.
