Ingredients

  • 2 c. shredded zucchini
  • 3 eggs
  • 2 1/4 c. sugar
  • 1 c. oil
  • 1 tsp. vanilla
  • 3 c. flour
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 c. raisins (optional)
  • 1 c. nuts (optional)

Instructions

  1. Combine shredded zucchini and beaten eggs in a bowl.
  2. Add sugar, oil, vanilla, flour, cinnamon, salt, and baking soda to the zucchini mixture and mix well.
  3. Pour the batter into loaf pans, angel food pan, or Bundt pan.
  4. Bake at 350°F for 1 hour or at 325°F for 1 hour and 15 minutes.
  5. Allow to cool before removing from pans and serving.
