Ingredients

  • 3/4 cup firmly packed brown sugar
  • 3/4 cup dark corn syrup
  • 4 squares semi-sweet chocolate
  • 6 tablespoons margarine or butter
  • 3 eggs
  • 1 1/3 cups flaked coconut
  • 1 cup chopped pecans
  • 1 3/4 cups nondairy whipped topping, thawed
  • 1 unbaked 9-inch pie shell
  • 1 tablespoon bourbon (optional)

Instructions

  1. Cook and stir brown sugar and corn syrup in a 3-quart saucepan until boiling.
  2. Remove from heat.
  3. Add margarine and chocolate; stir until just melted.
  4. Cool slightly.
  5. Add eggs, one at a time, beating well after each addition.
  6. Stir in coconut and chopped pecans.
  7. Pour the mixture into the unbaked 9-inch pie shell.
  8. Bake at 350°F for 1 hour or until a knife inserted 1 inch from the center comes out clean.
  9. Cool on a rack.
  10. Combine thawed nondairy whipped topping and bourbon.
  11. Serve the whipped topping with the pie.
