Ingredients

  • 2 lb. lean deer meat
  • 1/8 tsp. black pepper
  • 1/2 c. milk
  • 1/4 c. lemon juice concentrate
  • 3 c. flour
  • 1/2 tsp. seasoned salt
  • cooking oil
  • 1/4 c. lemon juice concentrate

Instructions

  1. Soak deer meat overnight in ice-cold salt water.
  2. Cut the meat into 3/4 ounce pieces across the grain.
  3. Combine flour, seasoned salt, and black pepper in a container; stir or shake until well blended.
  4. Mix milk and lemon juice together; pour over the deer meat and stir until all pieces are moistened, then drain excess liquid.
  5. Toss the meat pieces in the flour mixture until well coated.
  6. Heat deep fryer with cooking oil to 325°-350°F.
  7. Drop the coated meat pieces into the hot oil and cook for 3 to 4 minutes until golden brown.
