Ingredients

  • 6 lb. deer, coarsely ground
  • 4 lb. pork fat, fresh ground
  • 2 Tbsp. red cayenne pepper, dried and crushed
  • 1 Tbsp. nutmeg
  • 1 tsp. ginger
  • 3 tsp. sage

Instructions

  1. Grind all ingredients together, two or three times.
  2. Mix well.
  3. Put in a covered container in the refrigerator for about three days so flavors can blend.
  4. Divide into 10 (1-pound) packages and freeze.
