Ingredients

  • 1 1/2 to 2 lb. barbecued or roasted chicken from deli department
  • 1 small onion
  • 1 to 2 cups chicken broth
  • 4 carrots
  • 9 small red potatoes

Instructions

  1. In a skillet, cook the chopped onion until translucent.
  2. Add sliced carrots, halved small red potatoes, and 1 cup of chicken broth to the skillet.
  3. Cover and simmer until the vegetables are tender, about 25 minutes, adding more broth if needed.
  4. Cut the deli chicken into quarters and add it to the skillet five minutes before the cooking time ends.
