Ingredients

  • 2 squares baking chocolate
  • 3 1/4 cups granulated sugar
  • 3 cups sifted cake flour
  • 1/2 teaspoon baking powder
  • 2 egg whites
  • 1 1/2 teaspoons vanilla
  • 1 pinch cream of tartar
  • 1 cup butter
  • 1 1/2 cups buttermilk
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 eggs, separated
  • 1 cup water

Instructions

  1. Melt the baking chocolate over simmering water.
  2. Cream together the butter and 2 1/4 cups sugar.
  3. Add the melted chocolate to the creamed butter and sugar mixture.
  4. Sift the cake flour, salt, baking soda, and baking powder together.
  5. Add the sifted dry ingredients alternately with buttermilk to the chocolate mixture.
  6. Add well-beaten egg yolks and vanilla extract.
  7. In a separate bowl, beat the egg whites with a pinch of cream of tartar until stiff peaks form.
  8. Fold the beaten egg whites into the batter gently.
  9. Pour the batter into three well-greased and floured 9-inch cake pans.
  10. Bake at 350°F (175°C) for 30 to 35 minutes.
