Denise's Edible Eggplant is a cheesy, flavorful casserole featuring tender eggplant, savory tomatoes, and melted Monterey Jack and Swiss cheeses, perfect for comforting family meals.

Ingredients

  • 1 large eggplant
  • 1 medium cooking onion
  • 1 can stewed tomatoes
  • 2 Tbsp. vegetable oil
  • 2 c. shredded Monterey Jack cheese
  • 1 c. shredded Swiss cheese
  • 1 Tbsp. garlic
  • 1 Tbsp. oregano

Instructions

  1. Peel the eggplant and slice it into 1-inch slices.
  2. Salt the eggplant slices on both sides and let sit for 20 minutes to remove bitterness.
  3. Chop the onion and sauté in vegetable oil with garlic and oregano until half cooked.
  4. Rinse the eggplant well and cut into small squares.
  5. Add the eggplant to the onion mixture and sauté on low heat for 10 minutes.
  6. Add the can of stewed tomatoes and sauté for another 10 minutes.
  7. Transfer the mixture into a casserole dish, sprinkle with shredded cheeses, and microwave or bake until the cheese is melted.
