Easy Oven Ratatouille

Ingredients

  • 2 Tbsp. olive oil
  • 1 large onion, sliced
  • 1 medium zucchini, sliced
  • 1 (16 oz.) can whole tomatoes, chopped
  • salt and pepper to taste
  • basil to taste
  • chopped garlic (optional)
  • 4 slices cheese (any kind but Swiss)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Put all ingredients except cheese in a medium Pyrex dish.
  3. Cover the dish with a lid or aluminum foil.
  4. Bake in the oven for 30 minutes.
  5. Remove from oven and place cheese slices on top.
  6. Return to oven, uncovered, and bake for an additional 20 minutes.
