A comforting rice pudding infused with vanilla or lemon, sweetened with brown sugar and enriched with raisins, perfect served warm or cold for a delightful dessert.

Ingredients

  • 1/2 cup raisins
  • 2 cups milk
  • 2 cups cooked rice
  • 2 egg yolks
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1/2 teaspoon vanilla or lemon juice

Instructions

  1. Soak raisins in hot water to cover until raisins are soft.
  2. In a double boiler, heat milk and cooked rice.
  3. Beat egg yolks until smooth and add brown sugar and salt.
  4. Add the egg yolk mixture very slowly to the milk and rice mixture.
  5. Pour the mixture back into the double boiler and cook over boiling water until very thick.
  6. Fold in beaten egg whites.
  7. Add vanilla or lemon juice.
  8. Fold in drained raisins.
  9. Serve warm or cold, optionally with fruit such as blueberries and a sprinkle of cinnamon.
