Dessert Au Riz
A comforting rice pudding infused with vanilla or lemon, sweetened with brown sugar and enriched with raisins, perfect served warm or cold for a delightful dessert.

Instructions
- Soak raisins in hot water to cover until raisins are soft.
- In a double boiler, heat milk and cooked rice.
- Beat egg yolks until smooth and add brown sugar and salt.
- Add the egg yolk mixture very slowly to the milk and rice mixture.
- Pour the mixture back into the double boiler and cook over boiling water until very thick.
- Fold in beaten egg whites.
- Add vanilla or lemon juice.
- Fold in drained raisins.
- Serve warm or cold, optionally with fruit such as blueberries and a sprinkle of cinnamon.
