Ingredients

  • 1/4 cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 ounce unsweetened chocolate, melted
  • 3 cups sifted flour
  • 3 teaspoons baking powder
  • 1/4 cup milk
  • 3 tablespoons rum flavoring
  • 1 teaspoon vanilla
  • 3/4 cup chopped nuts

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add eggs, one at a time, beating thoroughly after each addition.
  3. Beat in melted unsweetened chocolate.
  4. Add sifted dry ingredients in thirds, alternately with milk and flavoring, beating until smooth after each addition.
  5. Stir in chopped nuts.
  6. Using 2 buttered jelly roll pans, spoon batter in 4 rows, the length of the pans (2 rows in each pan).
  7. Arrange batter together in even strips, about 2 inches wide.
  8. Beat the egg white with a fork and brush some over each row, avoiding spillover onto the pan.
  9. Lightly sprinkle sugar over the top.
  10. Bake in a 375°F (190°C) oven for 20 minutes.
  11. Frost if desired.
  12. Cut into diagonal slices before serving.
