Detox Bean Salad

Ingredients

  • 1 (8 ounce) can black beans
  • 1 (8 ounce) can white beans
  • 1 (8 ounce) can chickpeas
  • 1/2 cup tomatoes, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup shallot, diced
  • 1 bell pepper, chopped
  • 1/2 cucumber, chopped
  • 3 tablespoons extra virgin olive oil
  • 1/2 lemon (juice of)
  • (optional)

Instructions

  1. Combine all ingredients in a large bowl.
  2. Toss with olive oil and lemon juice.
  3. Add fresh spices if you wish. (I suggest parsley and cumin).
  4. Note: balsamic vinegar may be substituted for lemon juice.
