Ingredients

  • 6 eggs, hard boiled
  • 2 small potatoes, scrubbed and boiled
  • 1 pat butter
  • 1 little milk
  • 1 medium onion, very finely chopped
  • 2 small fresh green chilies, finely chopped
  • salt and black pepper, to taste
  • 1 tablespoon fresh coriander, shreaded
  • batter, for coating
  • oil (for deep frying)

Instructions

  1. Cut each egg in half and remove the yolk.
  2. Mash the yolk with the boiled potatoes, milk and butter. Add the finely chopped onion, the chilies the coriander and seasoning and continue to mash.
  3. Put the mash into the orifices left by the egg yolk, piling it high and chill for 30 minutes. Dip in batter and deep fry until golden brown.
