Ingredients

  • 1 tsp unflavored gelatin
  • 1 cup whipping cream
  • 1/4 cup sugar
  • 2 tsp vanilla
  • 8 oz sour cream
  • 4 cups assorted fresh fruit (raspberries, blueberries, peaches, nectarines, strawberries, kiwi), peeled and cut
  • 2 Tbsp sugar
  • 1 (10 3/4 oz) frozen loaf pound cake, thawed
  • 1/4 cup peach brandy, Amaretto, orange liqueur or orange juice

Instructions

  1. In a small saucepan, combine gelatin and 1/2 cup cold water; let stand 5 minutes.
  2. Heat and stir over medium heat until gelatin dissolves; then cool.
  3. In a medium bowl, beat whipping cream, 1/4 cup sugar, and vanilla on medium-low speed until soft peaks form.
  4. Combine the cooled gelatin mixture with sour cream and mix well.
  5. Fold the gelatin-sour cream mixture into the whipped cream gently.
  6. Chill the mixture for 1 hour.
  7. Slice the loaf pound cake and arrange on a serving dish.
  8. Mix 2 tablespoons sugar with assorted fresh fruit and let sit for a few minutes.
  9. Layer the fruit mixture over the cake, then spoon the cream mixture over the top.
  10. Optional: drizzle with peach brandy, Amaretto, orange liqueur, or orange juice before serving.
