Devonshire Cream Fruit
A luscious layered dessert featuring creamy fruit topping and sponge cake, perfect for special occasions or gatherings with fresh, vibrant flavors and a rich, smooth texture.
Ingredients
- 1 tsp unflavored gelatin ⓘ
- 1 cup whipping cream
- 1/4 cup sugar ⓘ
- 2 tsp vanilla ⓘ
- 8 oz sour cream ⓘ
- 4 cups assorted fresh fruit (raspberries, blueberries, peaches, nectarines, strawberries, kiwi), peeled and cut ⓘ
- 2 Tbsp sugar ⓘ
- 1 (10 3/4 oz) frozen loaf pound cake, thawed
- 1/4 cup peach brandy, Amaretto, orange liqueur or orange juice ⓘ
Instructions
- In a small saucepan, combine gelatin and 1/2 cup cold water; let stand 5 minutes.
- Heat and stir over medium heat until gelatin dissolves; then cool.
- In a medium bowl, beat whipping cream, 1/4 cup sugar, and vanilla on medium-low speed until soft peaks form.
- Combine the cooled gelatin mixture with sour cream and mix well.
- Fold the gelatin-sour cream mixture into the whipped cream gently.
- Chill the mixture for 1 hour.
- Slice the loaf pound cake and arrange on a serving dish.
- Mix 2 tablespoons sugar with assorted fresh fruit and let sit for a few minutes.
- Layer the fruit mixture over the cake, then spoon the cream mixture over the top.
- Optional: drizzle with peach brandy, Amaretto, orange liqueur, or orange juice before serving.
