Ingredients

  • 2 cups milk
  • 3/4 cup sugar
  • 4 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 3 egg yolks
  • 1 1/2 cups coconut
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • cooked pie shell

Instructions

  1. Heat 2 cups of milk on High in the microwave for 6 minutes.
  2. In a bowl, beat 3 egg yolks and then mix with sugar, cornstarch, and salt.
  3. Add the egg mixture to the heated milk and cook on High for 4 to 5 minutes until thickened (like pudding).
  4. Stir in 1 1/2 cups coconut, 2 tablespoons butter, and 1 teaspoon vanilla extract.
  5. Pour the filling into a cooked pie shell.
  6. Beat 3 egg whites until stiff and spread on top of the pie to make meringue.
  7. Brown the meringue in the oven until golden.
