Ingredients

  • 2 cups crushed pineapple including juice
  • 1 tablespoon lemon juice
  • 3/4 cup sugar
  • 1 (3 oz.) box lemon Jell-O
  • 1/4 cup cold water

Instructions

  1. Heat the crushed pineapple with its juice in a saucepan.
  2. Add lemon juice and sugar to the pineapple mixture, stirring well until the sugar dissolves.
  3. Dissolve the lemon Jell-O in 1/4 cup cold water.
  4. Add the dissolved Jell-O to the pineapple mixture and stir well.
  5. Set the mixture in the refrigerator until it is practically set.
  6. Fold in grated cheese and Cool Whip.
  7. Pour the mixture into a mold and refrigerate until fully set.
