Ingredients

  • 2 lb. carrots
  • 1 large onion
  • 3 Tbsp. butter or margarine
  • 1 tsp. sugar
  • 1/3 lb. Velveeta cheese

Instructions

  1. Peel and slice the carrots crosswise.
  2. Cook the carrots in salted water until just tender, then drain.
  3. While the carrots are cooking, sauté the sliced onion in butter until transparent, without browning.
  4. Add sugar to the onion and butter mixture.
  5. Stir in Velveeta cheese bits until melted and smooth.
  6. Combine the cooked carrots with the cheese mixture and serve warm.
