Dilly Bread(From Weight Watchers Cookbook)

Ingredients

  • 1 Tbsp. oil plus 1 tsp. active dry yeast
  • 2 c. low-fat cottage cheese, heated to lukewarm
  • 1/4 c. sugar
  • 2 Tbsp. margarine, melted
  • 2 Tbsp. minced onion
  • 2 large eggs
  • 1 Tbsp. plus 1 tsp. dill weed or dill seed
  • 2 tsp. salt
  • 1/2 tsp. baking soda
  • 4 1/2 c. all-purpose flour

Instructions

  1. In a large bowl, dissolve yeast in 1/2 cup lukewarm water. Stir in remaining ingredients, except flour.
  2. Add 4 1/4 cups of the flour, one cup at a time, stirring with wooden spoon after each addition, until soft dough forms.
  3. Sprinkle work surface with 2 tablespoons of the remaining flour.
  4. Turn dough out onto floured surface.
  5. Knead until dough is smooth and elastic, about 5 minutes.
