Dilly Cottage Batter Bread

Ingredients

  • 2 1/2 c. all-purpose flour
  • 1 pkg. active dry yeast
  • 1 Tbsp. instant minced onion
  • 1 tsp. salt
  • 1/2 tsp. dill weed, thyme or rosemary
  • 1 c. creamed cottage cheese (at room temperature)
  • 1/2 c. hot tap water
  • 1 egg (at room temperature)
  • 1 Tbsp. honey

Instructions

  1. Combine 1 cup flour, yeast, onion, salt and dill weed.
  2. Add cottage cheese, water, egg and honey to flour mixture.
  3. Beat 3 minutes by hand or with electric mixer.
  4. Beat in remaining flour. Cover and let rise in warm place until double in bulk (about 1 hour).
  5. Stir down batter; pour into a well-greased 1 1/2-quart casserole.
  6. Let rise in a warm place until light (30 to 40 minutes).
  7. Bake at 375° for 50 to 55 minutes or until done.
