Dinner Pancakes

Ingredients

  • 2 c. flour
  • 2 eggs
  • 1 Tbsp. sugar
  • 4 tsp. baking powder
  • 1 c. frozen thawed mixed vegetables
  • 1/2 c. shredded cheese
  • 1/2 c. diced and cooked ham, chicken or turkey
  • 1 c. milk
  • 1 c. chicken broth
  • 1/4 c. oil
  • 1/2 tsp. salt

Instructions

  1. Mix ingredients as you would regular pancakes.
  2. Fry in a skillet, just as you would regular pancakes.
  3. (Best if fried in butter.)
  4. Serve with chicken gravy and watch your family's surprise.
