Ingredients

  • 3 to 4 lb. chuck roast
  • 1 to 2 onions, chopped
  • 2 stalks celery, chopped
  • 1/4 tsp. pepper
  • 1 beef bouillon cube
  • 1 bay leaf
  • 2 Tbsp. oil
  • 1 (28 oz.) can Italian tomatoes

Instructions

  1. Brown the roast in oil on all sides.
  2. Remove the roast from the pan.
  3. Brown the chopped onions and celery in the same pan.
  4. Add pepper, beef bouillon cube, and bay leaf to the onions and celery.
  5. Return the meat to the pan.
  6. Place the browned onions and celery on top of the meat.
  7. Mash the Italian tomatoes and add them to the pan along with their juice and sauce.
  8. Add 2 cups of hot water to the pan.
  9. Ensure the meat is covered in sauce.
  10. Simmer until the meat is tender, about 2 hours or more.
  11. Pour 1 cup of the sauce into a skillet.
  12. Add the rice to the skillet and brown it for at least 5 minutes.
  13. Stir until the sauce is absorbed and the rice begins to brown.
  14. Add water to cover the rice.
  15. Bring to a boil, then simmer uncovered for about an hour.
  16. Continue to stir occasionally.
  17. Cook until the liquid is absorbed but the rice remains juicy.
  18. Save some sauce to serve as gravy with the roast and rice.
