Divinity Swirls are light, airy candies with sweet vanilla flavor and vibrant food coloring swirls, perfect for festive occasions or as a delightful homemade treat.

Ingredients

  • 2 c. sugar
  • 1/2 c. corn syrup (light)
  • 1/2 c. water
  • 2 egg whites
  • 1 tsp. vanilla
  • food coloring

Instructions

  1. Blend sugar, corn syrup, and water in a medium-sized saucepan. Cook over high heat without stirring until a teaspoon of syrup dropped in cold water forms a soft ball; remove from heat.
  2. In a large bowl, beat egg whites until they form stiff peaks.
  3. Pour one-third of the hot syrup over the egg whites and beat well.
  4. Continue cooking remaining syrup rapidly over high heat until a teaspoon dropped into cold water forms a hard ball.
  5. Pour the hot syrup in fine streams over the egg white mixture, beating constantly.
  6. Add vanilla and continue to beat until the mixture becomes very stiff and forms peaks that do not flatten out.
  7. Swirl with food coloring on wax paper and let set before serving.
