Ingredients

  • 2 1/2 cups sugar
  • 3 tablespoons white corn syrup
  • 1/2 cup water
  • 1/4 cup egg whites
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Instructions

  1. In a heavy saucepan, combine sugar, corn syrup, and water. Cook syrup slowly, stirring constantly with a wooden spoon, until sugar dissolves and syrup reaches boiling stage.
  2. Place a candy thermometer in the saucepan.
  3. Boil syrup, without stirring, over medium heat until the thermometer registers 256°F.
  4. Remove from heat. Beat egg whites until stiff peaks form.
  5. Pour hot syrup slowly into egg whites, beating constantly.
  6. Continue to beat mixture until it holds shape and loses gloss.
  7. Stir in vanilla and chopped pecans.
  8. Drop mixture onto wax paper with a tablespoon.
