Ingredients

  • 2 1/2 c. sugar
  • 1/2 c. corn syrup
  • 2/3 c. water
  • 1/8 tsp. salt
  • 2 egg whites
  • 1 Tbsp. vanilla
  • 1 1/2 c. chopped pecans

Instructions

  1. Heat sugar, corn syrup, salt, and water in a saucepan over medium heat until a small amount forms a soft ball in cold water.
  2. Remove ½ cup of the hot mixture and slowly pour it over the stiffly beaten egg whites, continuing to beat until the remaining syrup reaches the hard ball stage on a candy thermometer.
  3. Beat rapidly while pouring the rest of the syrup over the egg white mixture.
  4. When the mixture thickens, add chopped pecans and vanilla, and beat by hand until the candy holds its shape when dropped from a spoon.
  5. Drop spoonfuls onto waxed paper to cool and set.

Tips & Substitutions

For best results, use a candy thermometer to ensure the syrup reaches the hard ball stage, which is crucial for proper texture. If you don't have pecans, walnuts or almonds can be good substitutes. Make sure your egg whites are at room temperature for easier whipping, and a pinch of cream of tartar can help stabilize them during beating.

Serving Suggestions

Divinity makes a delightful treat for holiday gatherings or as a sweet gift. It pairs beautifully with a cup of coffee or tea. Consider serving it alongside other confections like Caramel Nut Candy for a varied dessert platter, or enjoy it as a standalone sweet treat after meals.

Storage & Reheating

Store any leftover divinity in an airtight container at room temperature for up to one week. Avoid refrigerating, as this can cause the candy to become sticky. If you want to maintain its texture, layer the pieces between sheets of wax paper to prevent sticking.

Frequently Asked Questions

What should I do if my divinity doesn't set properly?

If your divinity is too soft, it may not have reached the hard ball stage during cooking. You can try placing it back over low heat and cooking it a little longer, then re-beating it once it thickens. If it’s still too soft, consider using it as a topping for ice cream or mixing it into yogurt.

Can I make divinity ahead of time?

Yes, you can make divinity a few days in advance. Just ensure it's stored properly in an airtight container to keep it fresh. The candy can last for about a week, making it a great option for preparing holiday treats ahead of time.

Is there a vegan option for making divinity?

Traditional divinity relies on egg whites for its structure, so it can be challenging to make a vegan version. However, you could experiment with aquafaba (the liquid from canned chickpeas) as a substitute for egg whites. Whip the aquafaba to stiff peaks and follow the same method, though results may vary.
