  • 1/2 tsp. salt

  2. Cut the squash into 2-inch pieces.
  3. Place the squash in boiling, salted water to cover.
  4. Cook just until tender, about 10 minutes.
  5. Drain in a colander and mash to remove remaining liquid.
  6. Drain for 10 minutes.
  7. Preheat oven to 350°F.
  8. If using fresh onions, sauté in melted butter until soft, about 5 minutes.
  9. Combine drained squash, sautéed onions, melted butter, 1/2 cup of bread crumbs, sugar, salt, beaten eggs, and pepper.
  10. Pour the mixture into a lightly greased 1 1/2-quart casserole dish.
  11. Top with the remaining 1/2 cup of bread crumbs.
  12. Bake, covered, for 20 to 30 minutes or until set.
  13. Remove cover and return to oven.
  14. Bake until bread crumbs are golden, about 10 minutes.
