Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 3 eggs
  • 1 cup oil
  • 3 cups grated zucchini
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped apple
  • 1 cup pineapple, drained
  • 2/3 cup raisins

Instructions

  1. Mix flour, sugar, baking powder, baking soda, cinnamon, salt, and nutmeg in a large bowl.
  2. Beat eggs in a mixer bowl until thick and lemon colored.
  3. Add oil; mix well.
  4. Add dry ingredients; mix just until moistened.
  5. Stir in zucchini, apricots, apple, pineapple, raisins, coconut, and nuts.
  6. Spoon batter into 2 greased 5 x 9-inch loaf pans.
  7. Bake at 350°F for 1 hour or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and transfer to wire rack to cool.
