D.J.'S Noodle Salad

Ingredients

  • 1 large pkg. medium size noodles
  • 2 large tomatoes
  • 1 to 2 cups grated cheese (Colby or Cheddar)
  • approximately 2 Tbsp. balsamic vinegar
  • 1/3 cup olive oil
  • salt and pepper to taste

Instructions

  1. Cook noodles until done, then drain.
  2. Wash noodles with cold water until cool, then drain.
  3. Set aside noodles.
  4. Dice tomatoes in a separate bowl, then add balsamic vinegar, olive oil, salt, and pepper. Mix in 1 cup of cheese.
  5. Pour the tomato mixture over the noodles and stir to combine.
  6. Transfer to a serving dish and sprinkle the remaining cheese on top.
