Ingredients

  • 2 c. whole wheat flour
  • 1/2 c. cornmeal
  • 1/3 c. fresh mint or 1 Tbsp. dried
  • 1/2 c. chopped parsley
  • 6 Tbsp. safflower oil
  • 3/4 c. water

Instructions

  1. Preheat oven to 350°F.
  2. Combine whole wheat flour, cornmeal, mint, and parsley in a large bowl.
  3. Add safflower oil and water, then mix until a dough forms.
  4. Roll dough to 1/4 inch thickness on a floured surface and cut with cookie cutters.
  5. Bake for 40 minutes or until lightly browned.
  6. Turn off the heat and allow biscuits to dry out in the oven for several hours.
  7. Store in an airtight container in the fridge.
