Ingredients

  • 1 medium red apple, cored and diced
  • 1/2 cup chopped onion
  • 1/2 cup sliced celery
  • 1/3 cup seedless raisins
  • 1/2 tsp poultry seasoning
  • 1/4 tsp dry thyme leaves
  • 1/4 tsp black pepper
  • 2 tsp margarine
  • 3 cups cooked brown rice, cooked in apple juice
  • 1/3 cup rice bran
  • 1/3 cup slivered almonds, toasted
  • 1/4 cup apple juice

Instructions

  1. Cook apple, onion, celery, raisins, poultry seasoning, thyme, and pepper in margarine in a large skillet until vegetables are tender-crisp.
  2. Stir in cooked brown rice, rice bran, slivered almonds, and apple juice.
  3. Use as stuffing for poultry or pork roast, or serve as a side dish, heating until thoroughly warmed.
