Ingredients

  • 5 large carrots
  • 1 medium onion
  • 6 cups chicken broth
  • 2 tablespoons butter

Instructions

  1. Peel and chop the carrots and onion.
  2. Melt butter in a saucepan.
  3. Add the chopped carrots and onion to the saucepan.
  4. Cover and steam, stirring occasionally, for 20 minutes.
  5. Add the chicken broth and bring to a boil, then simmer for 45 minutes until vegetables are tender.
  6. Blend the mixture in a blender or with an immersion blender until smooth, including some of the liquid.
  7. Heat to boiling and serve.
