Ingredients

  • 1 wild duck
  • instant meat tenderizer
  • 2 slices bacon
  • 2 Tbsp. salad oil

Instructions

  1. With a sharp knife, remove the skin from the duck.
  2. Cut meat from the breast into 2 fillets.
  3. Use meat tenderizer as directed on the shaker.
  4. Wrap each fillet loosely with sliced bacon.
  5. Fasten with toothpicks.
  6. Cook fillets in hot salad oil over moderate heat until browned and tender, about 15 minutes per side.
  7. Serve on a hot platter with ribbons of cooked bacon.
