Ingredients

  • 3/4 cup thinly sliced fresh mushrooms
  • 1/2 cup seeded and chopped cucumber
  • 1 tablespoon sliced green onion
  • 1 clove garlic
  • 2 tablespoons balsamic vinegar
  • 1/8 teaspoon ground pepper
  • 1 hoagie bun
  • 2 lettuce leaves
  • 2 ounces thin sliced ham
  • 2 ounces thin sliced turkey
  • 4 slices tomato

Instructions

  1. Combine sliced mushrooms, chopped cucumber, sliced green onion, minced garlic, balsamic vinegar, and ground pepper; let stand for 30 minutes.
  2. Slice the hoagie bun in half lengthwise and remove the soft inside of both halves, leaving a shell.
  3. Spoon the mushroom mixture into each half of the bun.
  4. Cover the mushroom mixture with a lettuce leaf on each half.
  5. Top with sliced ham, turkey, and tomato slices.
  6. Sprinkle with shredded cheese and serve.
