Bright and tangy squash pickles combine crisp vegetables with a sweet and spicy vinegar marinade, perfect as a side or salad accompaniment for summer meals.

Ingredients

  • 5 medium yellow squash, sliced thin
  • 1/2 cup onion, sliced thin
  • 1/2 cup green bell pepper, sliced thin
  • 1/2 cup celery, cut in 1/2-inch slices
  • 2 tablespoons wine vinegar
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 2/3 cup cider vinegar
  • 1 clove crushed garlic

Instructions

  1. Combine the wine vinegar, cider vinegar, sugar, salt, and cayenne pepper in a bowl to make the marinade.
  2. Pour the vinegar mixture over the sliced vegetables and crushed garlic in a covered bowl.
  3. Chill in the refrigerator for about 12 hours, stirring occasionally to evenly distribute flavors.
