Ingredients

  • 1 cup firmly packed C & H brown sugar
  • 1/2 cup shortening
  • 2 eggs, separated
  • 1 1/2 cups cake flour
  • 1 1/4 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • pinch of salt
  • pinch of cream of tartar

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour two 8-inch cake pans.
  3. Cream brown sugar and shortening until light and fluffy.
  4. Stir in egg yolks, one at a time, beating well after each addition.
  5. Combine cake flour, baking powder, and baking soda.
  6. Mix milk and vanilla extract together.
  7. Add dry ingredients and milk alternately to the creamed mixture, beating gently after each addition.
  8. Beat egg whites with salt and cream of tartar until stiff, but not dry.
  9. Fold the beaten egg whites into the batter.
  10. Divide the batter evenly between the prepared pans.
  11. Bake for 25 minutes or until a cake tester inserted in the centers comes out clean.
  12. Allow cakes to cool, then frost with caramel frosting.
  13. Garnish with chocolate curls before serving.
