Double Layer Cookies

Ingredients

  • 2/3 c. butter or shortening
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 2 egg yolks
  • 1 Tbsp. water
  • 1 tsp. vanilla
  • 2 c. flour (plain)
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (6 oz.) pkg. chocolate chips
  • 2 egg whites
  • 1/4 tsp. cream of tartar

Instructions

  1. Preheat oven to 350°.
  2. Cream butter and sugars.
  3. Beat in yolks, water and vanilla.
  4. Mix flour, baking powder and salt together and stir into butter mixture.
  5. Pat into a greased 9 x 13-inch pan.
  6. Sprinkle evenly with chocolate chips.
  7. Beat whites and cream of tartar until stiff.
  8. Beat in 1 cup of brown sugar gradually.
  9. Spoon over cookie mixture in pan, spreading evenly into corners.
  10. Bake 30 minutes.
  11. Cut into squares while warm.
