Ingredients

  • 1 pkg Duncan Hines Deluxe strawberry supreme cake mix
  • 1 Tbsp vegetable oil
  • 2 (8 oz) pkgs cream cheese
  • 1 1/2 c sugar
  • 4 eggs
  • 1 1/2 c milk
  • 1 Tbsp lemon juice
  • 4 drops red food color
  • 2 1/2 c Cool Whip topping

Instructions

  1. Reserve 1 cup of dry cake mix from the package.
  2. In a large mixing bowl, combine the remaining cake mix, 1 egg, and vegetable oil. Mix until crumbly.
  3. Press the mixture evenly onto the bottom and up 3/4 of the sides of a 13 x 9 x 2-inch baking pan to form the crust.
  4. In the same bowl, blend the cream cheese and sugar until smooth.
  5. Add 3 eggs and the reserved cake mix to the cream cheese mixture. Beat for 1 minute at medium speed.
  6. At low speed, add milk, lemon juice, and red food color. Mix until smooth.
  7. Pour the filling into the prepared crust.
  8. Bake at 300°F (150°C) for 50 to 60 minutes, or until the center is firm.
  9. Allow the cheesecake to chill thoroughly before serving.
  10. Spread Cool Whip topping over the chilled cheesecake before serving.
