Double-Strawberry Cheesecake

- Reserve 1 cup of dry cake mix from the package.
- In a large mixing bowl, combine the remaining cake mix, 1 egg, and vegetable oil. Mix until crumbly.
- Press the mixture evenly onto the bottom and up 3/4 of the sides of a 13 x 9 x 2-inch baking pan to form the crust.
- In the same bowl, blend the cream cheese and sugar until smooth.
- Add 3 eggs and the reserved cake mix to the cream cheese mixture. Beat for 1 minute at medium speed.
- At low speed, add milk, lemon juice, and red food color. Mix until smooth.
- Pour the filling into the prepared crust.
- Bake at 300°F (150°C) for 50 to 60 minutes, or until the center is firm.
- Allow the cheesecake to chill thoroughly before serving.
- Spread Cool Whip topping over the chilled cheesecake before serving.
