Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup margarine
  • 1/2 teaspoon vanilla

Instructions

  1. In a bowl, mix flour, 1/2 cup sugar, baking powder, salt, and nutmeg.
  2. In another bowl, beat egg with milk, melted margarine, and vanilla.
  3. Add the flour mixture to the wet ingredients and stir just to moisten.
  4. Equally spoon half the batter into 12 buttered muffin cups.
  5. Add 1/2 teaspoon jam or jelly to each muffin.
  6. Top each with the remaining batter evenly.
  7. Bake in a 400°F oven until deep golden, about 18 to 20 minutes.
  8. Do not overbake.
